Coconut has seen a resurgence in popularity as a superfood in the last decade, and rightly so! There are not many foods with such impressive nutrition, as well as a wide variety of uses. The body burns off all the MCT’s as energy, and stores none as fat, making its metabolism much different from LCT’s, which comprise over 90% of the fats we usually eat. They require fewer digestive enzymes to break down, which results in less load on the pancreas.
