Coconut has seen a resurgence in popularity as a superfood in the last decade, and rightly so! There are not many foods with such impressive nutrition, as well as a wide variety of uses. I wish I could go back and tell my mother this, but she did the best she could with the tools she had available. The saturated fat in coconut oil is roughly 60& medium-chain triglycerides (MCT’s). MCT’s are an excellent clean-burning energy source that can benefit anyone from athletes to Alzheimer’s patients.

The body burns off all the MCT’s as energy, and stores none as fat, making its metabolism much different from LCT’s, which comprise over 90% of the fats we usually eat. They require fewer digestive enzymes to break down, which results in less load on the pancreas. Coconut water is some equally radical stuff, and in WWII was utilized as a blood plasma replacement when regular saline solution wasn’t available. It has a similar mineral balance to the plasma, making it nature’s perfect drink for complete rehydration. Coconut water is rich in potassium, magnesium phosphorous, vitamin c, and easily digestible carbohydrates. Coconut sugar is becoming a popular alternative sweetener; coconut sugar is simply coconut nectar that has had the moisture evaporated out. Coconut husks are also incredibly useful, as the fibrous strands are pressed into small bricks and sold as coco coir. Coco coir can be rehydrated and used as a soil substitute to cultivate mycelium, often with added vermiculite and gypsum. The coir also has use as a soil additive to increase drainage properties in your garden.
